Beef Jerky 
Remove and discard all fat. Freeze steak until icy. Cut in very thin strips, cutting across the grain for crisp and with grain for chewy. Place strips in bowl or crock in 1/2" thick layer. Sprinkle w salt, pepper, and liquid smoke. Repeat layers until all beef is used. Weight down w plate or heavy object; cover and refrigerate overnight. Drain and pat strips dry w paper towelling. Arrange strips on rack in shallow baking pan. Bake at 250 for 3.5-4 hours, til of desired doneness. Cool. Store in airtight plastic bags or jar w tight fitting lid in refrigerator until used. Makes 8-9 oz.

Corn Fritters

Combine all ingredients except corn and seal in zip locked bag. To serve: Reconstitute corn in 1 c water, add to dry ingredients and mix well. Add more water if necessary. Fry by spoonfuls on greased griddle.
Milk 0.5 c dry
Egg 1 T whole egg powder
Salt 1 tsp
Sugar 1 T
Baking Powder 1.5 tsp
Flour 1 c
Corn 1 pkg freeze dried



Hot Choco-Mallow Mix 
Mix all ingredients together. To serve, combine 1/4 c mix and 6 oz boiling water.
Milk 4 c instant nonfat dry
Creamer 1 c dry non-dairy
Sugar 0.75 c
Cocoa 0.75 c
Marshmallows 1 c miniature



Jerky Marinade for Beef & Game
Mix all ingredients. Marinate meat 12-24 hours, mixing occasionally.
Teriyaki Marinade 1 bottle (Kikkoman brand)
Sugar 0.5 c
Wine, Red 1 c
Water 0.5 c
Pepper 0.5 c
Onion Powder 1 tsp
Garlic Powder 1 tsp
Hot Sauce 1 tsp
Bourbon 2 oz
Onion 1 medium, diced



Peach/Plum Leather 
(Note: fruit may be overripe to make leathers) Blanch peaches in boiling water 1 minute; rinse w cold water and slip off skins. Thinly slice fruit, discarding pits and keeping each fruit separate. You need 2.5 c of each. In large saucepan, stirring constantly, slowly bring plums and honey to a boil; add peaches and, stirring constantly, boil for 3 min. Puree in blender; cool to lukewarm. Line the bottoms of 2 jellyroll pans (15x10x1) w plastic wrap. Pour fruit into pans, spreading thinly and evenly--it will be 1/8" thick or less. Dry in full sun or in oven at 150. Puree will be done when after loosening edge w spatula, you can peel it away from plastic wrap in a sheet. Roll it in plastic wrap so wrap touches each part of fruit sheet. Store in refrigerator (as long as 4 mo) or in freezer (as long as 8 mo.) To serve as jerky, cut into strips. To use strawberries, use 5 c and .25 c sugar.

Honey 0.25 c
